Blinis with caviar

Antonius Caviar

To prepare this dish you will need 30 g of Antonius Caviar Siberian. The product is available in our e-shop.

Blinis with caviar (4 servings)

Sour cream with chives (prepare in advance)


– 100 g (3,5 oz) of sour cream

– ½ bunch of chives

– ½ of red onion


Chop the chives finely and mix it with sour cream. Store in the fridge for about 3 hours.



– 250 g (9 oz) of wheat flour

– 250 g (9 oz) of buckwheat flour

– 1 egg

– 20 g (0,7 oz) of fresh yeast

– 0,5 l milk

– 1,5 tablespoon of butter

– 3 g (0,1 oz) salt

– 2 tablespoons of sugar

– 1 cup of warm water


Mix the yeast with sugar and 1 cup of warm water, add half of the flour. Mix together and leave for fermentation for half an hour. Add butter, salt, milk, egg yolk and the remaining flour. Mix properly and leave for fermentation for half an hour. Whisk the egg whites and add it to the mixture. Mix together gently. Leave for fermentation for half an hour. Fry the blinis on a pan with a drop of oil until brown on both sides.


Place finely chopped red onion on the top of the blini, add sour cream and caviar.
