Add one more egg white and 5ml of truffle olive oil into each bowl. Gather the\u00a0edges of cling film together, twist to secure (making sure\u00a0that there is no air inside), then bind with twine. Cook in boiling water for about 7.5 minutes.<\/p>\n<p><strong>Beurre Blanc sauce<\/strong><\/p>\n<p>Ingredients:<\/p>\n<p>\u2013 70 ml of white wine<\/p>\n<p>\u2013 70 ml of vinegar<\/p>\n<p>\u2013 1\/2 of shallot<\/p>\n<p>\u2013 10 g of tarragon<\/p>\n<p>\u2013 200 g of butter<\/p>\n<p>\u2013 1 bunch of chives<\/p>\n<p>Preparation:<\/p>\n<p>Peel shallot and cut into slices, pour white wine and vinegar into the saucepan, add the shallot and tarragon. Cook until\u00a0 reduced by half. Add cold butter to the evaporated base and stir until you get a smooth sauce. At the end, add finely chopped chives.<\/p>\n<p><strong>Crayfish tails<\/strong><\/p>\n<p>Ingredients:<\/p>\n<p>\u2013 200 g of crayfish tails<\/p>\n<p>\u2013 clarified butter<\/p>\n<p>\u2013 pinch of salt<\/p>\n<p>Preparation:<\/p>\n<p>Clean the crawfish and fry\u00a0in clarified butter, season with salt.<\/p>\n<p><strong>Mushroom duxelle<\/strong><\/p>\n<p>Ingredients:<\/p>\n<p>\u2013 300 g of mushrooms<\/p>\n<p>\u2013 1 shallot<\/p>\n<p>\u2013 50 ml of truffle oil<\/p>\n<p>\u2013 pinch of pepper<\/p>\n<p>Preparation:<\/p>\n<p>Cut mushrooms and shallots finely. Warm up the oil in a saucepan, fry the shallots and then add the mushrooms. Cook until 90% of water has evaporated, at the end season with pepper and truffle oil.<\/p>\n<p>Place the mushroom duxelle on a deep plate, put truffle egg on top, add crayfish necks and\u00a0Beurre Blanc sauce.
