Caviar obtained from the bester species, a hybrid of beluga and sterlet (Huso huso × Acipenser ruthenus). The albino form of the bester is extremely rare. This fish exclusively produces roe with exceptional buttery-yellow hues, delicate and creamy in texture, with subtle notes of umami and a light minerality.
